Hot Sipping Chocolate with Cinnamon Whipped Cream

Yield: 12 servings
Prep Time: 15 minutes

INGREDIENTS

4 cups half-and-half, light cream, or whole milk
1 cup Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips
12 cup Ghirardelli Sweet Ground Chocolate and Cocoa
1 tablespoon granulated sugar
1 recipe Cinnamon Whipped Cream (see below)
Stick cinnamon
Cinnamon Whipped Cream
34 cup whipping cream
2 tablespoons powdered sugar
14 teaspoon ground cinnamon

INSTRUCTIONS

  1. In a 3-quart heavy saucepan, combine half-and-half, Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips, Ghirardelli Sweet Ground Chocolate and Cocoa, and sugar. Cook over medium-high heat, whisking constantly, until just boiling and mixture is smooth.
  2. Serve immediately in demitasse cups or shot glasses with Cinnamon Whipped Cream and stick cinnamon.
Cinnamon Whipped Cream
  1. In a chilled medium bowl, combine whipping cream, powdered sugar, and cinnamon. Beat with chilled beaters of an electric mixer on medium speed until soft peaks form (tips curl).

“Grown Up” Hot Chocolate

INGREDIENTS
4 ounces Ghirardelli 60% Cacao Bittersweet Chocolate Chips      
1 cup half-and-half
1 tablespoon amaretto (almond liqueur)
1 teaspoon vanilla extract
1/2 cup whipped cream

INSTRUCTIONS
In saucepan over low heat, bring chocolate and half-and-half to simmer, whisking constantly. Simmer 1 minute or until mixture thickens slightly. Remove from heat; whisk in liqueur and vanilla. Pour into four 1/2-cup demitasse or coffee cups. Top each serving with 2 tablespoons whipped cream; dust with Ghirardelli Unsweetened Cocoa (if desired). Serve immediately. Tip: Instead of amaretto, use 1 tablespoon hazelnut, coffee or orange liqueur or peppermint schnapps, or 1/2 teaspoon almond or peppermint extract.

Raspberry Chocolate Tassies

INGREDIENTS
30 baked miniature phyllo dough shells
1-1⁄4 cups Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips
1⁄4 cup whipping cream
3 tablespoons seedless raspberry jam
8 Ghirardelli Dark & Raspberry SQUARES™ Chocolate, cut in quarters*
Fresh red raspberries (optional)

INSTRUCTIONS
Bake phyllo shells according to package directions. Cool on a wire rack.
Meanwhile, in a medium microwave-safe bowl, combine Ghirardelli® 60% Cacao Bittersweet Chocolate Baking Chips, whipping cream, and raspberry jam. Microwave on medium power (50 percent) for 1 minute. Remove and stir. If chocolate is not melted, return to microwave and repeat heating step, stirring every 30 seconds to avoid scorching. Stir until smooth.
Spoon the chocolate mixture evenly into the baked phyllo shells. Top each with a piece of Ghirardelli Dark & Raspberry SQUARES™ Chocolate. Let stand at room temperature for 1 hour or until set. Enjoy immediately or refrigerate in an airtight container for up to 3 days. If desired, garnish each with a fresh raspberry just before serving.
*Tip: For easier cutting, place Ghirardelli Dark & Raspberry SQUARES™ Chocolates in a single layer on a baking sheet. Freeze for at least 30 minutes. Using a sharp knife, cut squares into quarters.

Hot Cocoa Cookies Recipe

Prep Time: 20 minutes | Total Time: 1 hour 52 minutes | Makes: 48 cookies

Ingredients
1-1/4 cups butter, softened
1 cup granulated sugar
2/3 cup packed brown sugar
2 eggs
1 teaspoon vanilla
3-1/4 cups flour
3/4 cup or 4 envelopes Swiss Miss® Milk Chocolate Hot Cocoa Mix (Do not use No Sugar Added mix)
1-1/4 teaspoons baking soda
1 teaspoon baking powder
1 cup semi–sweet chocolate chips
1 cup Kraft® Jet-Puffed® Vanilla Mallow Bits
Directions
Heat oven to 350°F. Beat butter and sugars in large bowl with standing mixer until light and fluffy. Add eggs and vanilla; mix well.
Combine next 4 ingredients. Gradually beat into butter mixture until blended. Stir in chocolate chips and Mallow Bits. Cover and chill 1 hour.
Drop 2 tablespoons dough, 2 inches apart, onto baking sheets. Bake 9 to 11 minutes or until edges are lightly browned. Cool on baking sheets 5 minutes; remove to wire racks and cool.
